Recipe: Cinnamon Buns

The decadent smell of these delicious cinnamon buns are sure to rouse any heavy sleepers out of bed!

Ingredients:

Dough:
  • 1 c warm milk 
  • 2 eggs, room temperature and lightly beaten
  • 1/3 c butter, melted
  • 4 1/2 c flour 
  • 1 tsp salt
  • 1/2 c sugar
  • 1/2 c finely chopped walnuts (optional)
  • 1 packet yeast (1/4 ounce)
Filling:
  • 1 1/2 c brown sugar, packed
  • 3 tbs ground cinnamon
  • 8 tbs butter, softened
Icing:
  • 6 oz cream cheese, softened
  • 1/2 c butter, softened
  • 3 c powdered sugar
  • 1 tsp vanilla extract

Method:
  1. Microwave milk for about 1 minute, until very warm.
  2. In a large bowl, add yeast and sugar to milk and allow yeast to activate for 5-10 minutes.
  3. Add the melted butter and eggs, stir to combine.
  4. Add flour and stir until combined.
  5. When too hard to combine with a spoon, form a large ball of dough with your hands (lightly dust your hands with flour first to avoid sticking).
  6. Turn the dough out onto a lightly floured counter and kneed for 4-6 minutes.
  7. Put dough ball in a large lightly-oiled bowl and cover with plastic wrap.
  8. Allow dough to rise at room temperature for at least 1 hour, until the dough has doubled in size.
  9. In a separate large bowl, combine the brown sugar, cinnamon, and chopped nuts.
  10. Once dough has risen, spray a large surface lightly with cooking spray.
  11. Roll out the dough on this surface to a roughly 16 x 21 inch rectangle about 1/4 inch thick.
  12. Spread the softened butter for the filling evenly across the dough surface.
  13. Sprinkle the cinnamon, brown sugar, and nut mixture evenly atop the buttered dough surface.
  14. Roll up the dough starting with the longer side into a long log.
  15. Cut the log into 12 rolls (if you have a bench scraper, use that for this step. If not, a greased knife will work).
  16. Place the rolls in a lightly greased 9 x 13 inch baking dish.
  17. Cover and allow the buns to rise for 30-45 minutes at room temperature.
  18. Refrigerate overnight for best flavor (the yeast continues to work magic in the dough, though this step is not necessary).
  19. Preheat oven to 350 F.
  20. Beat together the ingredients for the icing until smooth.
  21. Bake the buns for 18-25 minutes, until they are golden brown.
  22. Spread the icing on the buns while they're still hot, which will allow the icing to melt into the rolls.
